Apricot, oat and flaxseed snack balls

These little snack balls are great for a quick boost of natural energy for kids or adults and so easy to make up a batch ready to pop in a lunch box or to grab when your short of time.

But more importantly they are great for gut health! (read more below)

These snack balls are great for gut health due to the fibre from the oats and flaxseeds. Oats contain a special type of soluble fibre called beta-glucans that is associated with better gut function, blood sugar control, boosting immunity, and lowering cholesterol! And flaxseed are brilliant at improving gut motility, but also are a great plant-based source of omega 3 fats and phytochemicals called lignans, a phytoestrogen that can help support hormonal balance.

This combined with the apricots that are a great source of nutrients including iron and also support gut health as they are a great source of soluble fibre and sorbitol which is a natural laxative, make these snack balls ideal for anyone struggling with constipation.


Make a batch up and pop them in the fridge for an easy go to snack for the whole family. They will keep for 1-2 weeks.


Ingredients:

250g dried apricots

100g rolled oats

3 tbsp flaxseed

1 tsp cinnamon

1 tsp vanilla essence

1 tbsp coconut oil


Recipe:

Soak the dried apricots in warm water for 10-15 minutes.

Meanwhile put the oats and flaxseed in a food processor and blitz until combined.

Drain the apricots and add them along with the cinnamon, coconut oil and vanilla essence (keep the coconut to the side in a bowl) to the food processor, blend until it forms into a sticky dough and it starts to clump together.

If everything is finely chopped but still not coming together, add a teaspoon of water at a time until the dough comes together in a sticky clump.

Once everything is mixed together, scoop out about a tablespoon and roll the mixture together with your palm and shape it into a ball. Roll the balls in the desiccated coconut and press in gently until covered.

Store in an airtight container in the fridge, they will firm up while in the fridge and be less sticky.

Makes about 16 balls.
