I don't know about you but I find that sandwiches can get really boring, especially for kids who might have them most days in their lunch boxes. If your looking for something to make lunch boxes a bit more fun why not try a pinwheel. They are really easy to make, you can play around with different fillings, and can be stored for a few days so are great to have in the fridge to pop in a lunch box or take to work.
I would love to say I have made this pastry from scratch. But I'm afraid not, I use shop bought pastry (if you make it yourself then well done you! I just can't find the time). You can mix different flavours in and different fillings, and kids can help make them, little hands can help throw on the ingredients and role them up. They find it quite fascinating seeing what they look like when they come out of the oven.
Recipe:
280g puff pastry sheet (I use Jus-rol gluten free pastry ready rolled)
50g cheddar cheese (grated)
30g (handful) fresh spinach
1 tbsp red pesto
Recipe:
Preheat the oven to 200°C (395°F).
Roll out pastry sheet, evenly spread on pesto so the sheet is covered, add a single layer of spinach leaves on top then add grated cheese. roll pastry sheet so it resembles a large sausage and then cut rolls about 2cm wide along the roll.
Brush a baking tray with oil or butter, place these rolls lying down on a baking tray. Put in the oven for 10-12 minutes, until golden brown on top.
