This super easy recipe makes a lovely healthy dessert or breakfast. I like making the toppings a little more elaborate for me and my husband but it's just as nice letting the kids pick the toppings and decorate it in their own unique style!
I've been making this chia pudding for a few years. It's such an easy recipe and works great as a dessert and also as a breakfast, you can change the toppings to suit.
It's full of omega 3 from the chia seeds to help with reducing inflammation and brain health, healthy fats from the coconut to keep you feeling full, and antioxidants from the berries as well as vitamin C and fibre for immune and gut health.
So great for both adults and kids!
My kids love choosing the toppings themselves!
It's gluten and dairy free too!
Recipe: (makes 2 large bowls or 4 small)
1 x 400ml tin full fat coconut milk
65g of chia seeds
2 tbsp honey
1 tsp of vanilla essence
A selection of fresh berries
Dark chocolate
drizzle of honey
Add all the ingredients into a bowl and mix with a whisk until smooth.
If the coconut milk is really lumpy you can pop it into a blender for 30 seconds.
Pour into small bowls, stir a few times over 10 minutes to make sure the chia seeds are mixed well and put in the fridge for at least 2 hours to set. Ideally overnight.
Once set add berries, grated dark chocolate and honey topping.
Or topping of your choice, granola and banana work as a lovely breakfast option.
