These little fritters are super easy to make and can be a great side dish, simple lunch or something a bit different for a kids lunchbox
Sweetcorn fritters made a regular appearance in my kitchen as a child, I have grown up eating them and still love them today. They are lovely and sweet from the sweetcorn, filling from the protein in the egg and easily transportable so make a great snack to take out for lunch or pop in a kids lunch box, great for adults and kids! Add a poached egg on top and they make a lovely weekend breakfast!
If you're not making these for kids then adding a bit of fresh chilli and some coriander can be a tasty addition.
Ingredients: (this recipe makes around 8 medium sized fritters)
1 tin of sweetcorn (260g drained weight)
1 egg
4 tbsp gram flour
1/2 tsp baking powder
1/2 red pepper finely chopped
80g halloumi grated or finely chopped
1 tsp smoked paprika
4 tbsp oat milk
Salt and pepper
Topped with sliced avocado and cherry tomatoes
Method:
Add egg to a mixing bowl and beat. Add sweetcorn, pepper and halloumi and mix. Add remaining ingredients and mix until everything is combined in a smooth batter.
Heat a frying pan over a medium heat and add a spoonful of batter and shape into a circle, cook for a couple of minutes until lightly browned, flip and cook the other side. Repeat with the remaining mixture and enjoy!
Top with avocado and tomato, or any other topping you fancy!
These are gluten free as long as you use gluten free baking powder.
You can easily make these dairy free by removing the halloumi, they still taste great.
