It can be very easy to slip into doing the same lunch box every day. But having a rotation of different lunch boxes can be more interesting for your child and diversify the nutrients they are getting.
One trick for making a lunch box more fun and that works well with picky eaters is using shapes. Kid's are much more interested in eating something that comes in a fun shape.
Getting some cookie cutters can be a great way to bring fun to a lunch box! This time it was hearts but sometimes we have dinosaurs, cars or stars. The kids also love getting involved with cutting the shapes out.
To make these hearts nice and thick I cooked the omelette in the cookie cutter, you can do this be adding a greased metal cooking cutter to a pan on a medium heat, let the cutter heat up a little and then very carefully pour your omelette into the mould, you may get some leaking out of the side that you can cut off after. Cook the omelette for a few minutes until most has cooked and then gently turn it over to cook the top. Remove from the heat and gently remove it from the mould, you may need a sharp knife to do this as the omelette can stick to the sides. Allow to cool before popping in a lunch box.
Cheesy pea omelette - for 1 lunch box
1 egg
1 tbsp nutritional yeast
1 tbsp peas (we use frozen and defrost first)
Mix all ingredients together in a bowl, cook on a medium heat in a small pan.

Chopped up cucumber and pepper
Strawberries and blueberries
Dark chocolate chip oat biscuits
