Immunity boosting bone broth

Autumn and winter are the perfect time to start making bone broth if you haven't before. Bone broth is super easy to make and incredibly good for your health and very low cost as you are re-using the bones from your roast chicken.

Why is bone broth good for your health? Well bone broth has been around for centuries, it's essentially just stock like our grandparents used to make. Unlike the stock we get from a stock cube, bone broth is packed with vitamins and minerals, protein and also glycine and collagen. The vitamins and minerals help your immune system and the water keeps you hydrated but it's the glycine and collagen that are particularly good as they support your gut health and most of our immune system reside in our guts.

So if you want to stay healthy this winter, cook up a batch of bone broth and use it as stock, a soup or noodle base or you can just drink it.


Ingredients:

1 Whole Chicken Carcass (about 900g of bones)

1 carrot (peeled and chopped)

1 white onion (diced)

2 stalks celery (chopped)

3 garlic (cloves, halved)

15 ml apple cider vinegar

1 tsp sea salt

60 (handful) Parsley and/ or thyme (chopped)

1.4L of water


Method

Place the bones in the slow cooker. Add all remaining ingredients. Set slow cooker to low and let cook for at least 12 hours.

After 12 hours, strain the broth through a strainer or sieve. Discard the vegetables that you strained out. Allow broth to cool. Once cool, remove the layer of fat that forms on the top and discard or save it for future cooking. Freeze broth until ready to use, or keep in the fridge for 3-4 days.
