This is a lovely simple family dinner, nourishing and full of flavour.
You can batch cook it to last a few days, to save cooking time in the week.
I love cooking one pot dishes, they are easy to prep and cook and usually don't leave much washing up, which is a win for me! And you can batch cook to last a few nights.
This recipe takes minutes to put together and once cooked it can be turned into a few different meals. This batch was made into one dinner with a side of brown rice and avocado and the next night was added with cheese into wholegrain wraps, and rolled into burritos and served with a side salad and sweetcorn fritters.
This recipe has chicken for protein, beans for fibre, sweet potato for beta-carotene and fibre, peppers, tomatoes and coriander for vitamin C, antioxidants and lycopene. To mention a few! It's great for supporting the immune system through the winter months.
This recipe is made in the instant cooker. But can be done in a pot on the stove, just ensure the chicken has enough time to cook through by browning it first and then allowing the sauce time to thicken, you may need to add more water/stock so ensure the sauce is the right consistency.
RECIPE:
This covers a family of 4 for 2 nights
Ingredients:
4 chicken breasts
2 red peppers
1 x 400g tin of black beans
1 x tin tomatoes
1 tbsp tomato paste
300g of sweet potatoes
1 tsp paprika
1 tsp smoked paprika
1 tsp cumin
1 tsp oregano
150g or water (you can use chicken stock if you prefer)
Handful of fresh coriander chopped
1 lime (optional)
Salt and pepper
1 tbsp olive oil
Method:
Chop the onion and garlic, heat the pressure cooker on saute. When hot add the onion, add oil and saute for a 5 minutes, stirring occasionally until soft, add the garlic for a further minute and then turn off.
Turn the pressure cooker onto poultry and once hot add remaining ingredients, except coriander and lime, close the lid and cook for recommended amount of time (mine was 15 minutes).
Once cooked, release the pressure valve.
Remove the chicken breasts and shred, then add back into pot.
Add the coriander, seasoning and a lime to taste.
You can add 50ml of more water if you need to thin the sauce out.
