I love an warming soup as autumn sets in, here is a quick and easy one for the whole family.
When autumn starts to set in, the leaves start to turn and the evenings start getting cooler I start craving soups!
There is something so lovely and cosy about a warm soup on a cold evening!
I love making soups, not only are they easy and cheap they are also super nutritious!
And there are so many combinations!
Here is one that went down well with the whole family. It's mildly spiced so suitable for the children but with enough to tinge an adults tastebuds. It contains two portions of vegetables and the lentils are a great source of protein, fibre and other nutrients.
When prepping the vegetables, I tend to leave the skins instead of peeling them as the skin is full of nutrients, however these can be peeled if you would prefer.
Recipe:
1 red onion
2 garlic cloves
3 medium carrots
3 medium sweet potatoes
1 tbsp coconut oil
1 tin of coconut milk (400ml)
100g red lentils rinsed
1 tsp turmeric
1/2 tsp cumin
1/2 tsp coriander
Thumb size fresh ginger
500ml of chicken or vegetable stock
Salt and pepper to season
Method:
Heat a large saucepan or soup pot on a medium heat and add coconut oil. Finely chops onion and add to pan once hot, saute until soft, add finely chopped garlic, grated ginger, and spices and continue to fry for another 1-2 minutes until fragrant.
Meanwhile cut carrots and sweet potatoes into small pieces and add to pan with lentils, coconut milk and stock and simmer with a lid on for 15 minutes.
Check all vegetables are cooked through, if still a bit hard leave for another few minutes.
Once cooked, blend until smooth.
Season to taste (I tend to season the adults once in bowls, and leave the children's without).
