Super simple kefir lollipops

Summer for our family means constant requests for lollipops! And when the weather is hot an ice cold treat can be the perfect way to cool down the little ones and keep them smiling. But I would rather not have to keep buying boxes of lollies from the shops as not only does this add to the weekly food bill, but lot's of the lollies available are not that healthy. So thats why I love making these, they are super easy to make and great for kids gut health (more below)!


So why are these lollies good for gut health? Well that's because they contain fibre from the fruit but also are made with kefir. Kefir is a fermented milk drink that is similar to yogurt, because it is fermented it is rich is gut supporting probiotic bacteria.

Kefir can be a little sour so you can add some honey to sweeten the lollies, or you can use normal yogurt or a dairy free option too.


Recipe: (makes 6 lollies)

1 banana

100g strawberries

200ml kefir

1 tbsp honey (optional)


Method:

Add all ingredients to a high speed blender and blend until smooth, pour into lollipop moulds (I use silicon ones, available from Amazon) and pop in the freezer for 6-8 hours or overnight and enjoy.

The great thing about this recipe is you can mix in any fruit you have as an alternative, mango and pineapple go great, so do blueberries and raspberries.
